07:15 pm - i am alive

let us play catch up:

what matters - i am in school again, classes are fun and as of yet pretty easy. my children are both well and growing like weeds. we got a puppy. still doing the vegan thing, and loving it. havent had a cig since august 5th or 6th.

what does not really matter but remains mentionable - my dad still is not really talking to me (oh well). i am still not really talking to my sister (oh well). i have been dropping emotional baggage all over the place, i am down to almost only nearest and dearest in my life...it is a wonderful thing, you should try it. there are still a few people that even i can not explain why we talk (Aaron Bale) but...i am a work in progress. i am a red head. one of my resolutions this year was to rock the socks of the USPS so i have been writing and sending mail like mad. i filed my taxes today. i'm in love with a stripper. mwah ha ha ha.

I have been helping Jessica move furniture in her house for 2 days straight. so I have not been eating breakfast, lunch, and dinner. Just one big meal each day.

Today I cooked for her family. They are vegetarian hating repulicans...but they LOVED my dinner. I made tacos with gardenburger, vegetarien refried beans, spanish rice, avacados, and quickly fried tortillas. I also made queso...which i didnt eat of course, but they ate the heck out of it. I was even invited to come cook for them every night...how sweet. ha ha.

It was so much fun cooking for everyone, there were 7 of us.

That is all for now.

Kids were finally back to school today..what a relief. The school board already decided to extend the year a week in May now though. When i was growing up in Cleveland there were so many days each year that could be taken off before school had to continue into the summer, i think it was 7 days or something. I guess Jefferson County does not plan ahead!! Hopefully there are not several snow days this winter or there might not be a summer vacation!

I have more family drama than i care to deal with these days. My sister is just failing at life, and her kids, specifically Riley, are suffering for it. I wish he could come live with me!!

I had a yummy red onion and avocado sandwich today for lunch and a cup of my french onion soup that was ten times better today then it was friday when i made it. We had dinner at Jessicas tonight and I knew I wouldnt be able to eat whatever she made so I grabbed some chickpeas, rice, and a package of gardenburger ribs. Not the healthiest dinner, but I had to grab something quick, and I havent been grocery shopping in a while. It was tasty though.

My sinuses are hating me today and my face is breaking out. I wonder if it is becasue of the new diet. I think maybe I am giving my body more time to flush toxins out before i am loading it up with new ones..and so they are getting out any way possible. My face never really breaks out at all, and the new diet is the only big change recently. Hm..

I can not wait until Thursday. It is almost making me SICK.

09:11 pm - week one complete

This past week was week one of entirely vegan eating. I made a bunch of things from scratch, ALL of which came out perfect.
I made huge pots of french onion, leek and potato, and cream of mushroom soup, and have enough left over for a few meals in the upcoming week. I made Caesar salads for Nick and I that were really good. OH, and our friday night dinner was AMAZING. Fakin' Bacon-lettuce-tomato sanwiches (although mine also had red onion and avacado). I have been eating the left overs for 2 days.

So i am going to be posting all the new recipes i am trying on here.

I tried the vegan thing once before, but i did it more because carrie was vegan, and then nick. and i got worried when i was went 130 days without a period, but this time i am not doing it for them...i am doing it for me and only me. i want my life to be better than it is now, and i guess a good place to start would be taking care of myself a little before taking care of EVERYONE else. i've been reading books about converting to a vegan lifestyle, and all the health benefits of it, and also some great vegan meal planning. i am really excited, and dedicated to sticking to it this time.

I am going to stop buying meat and dairy for my house entirely. My kids already love a lot of meat substitutes, and soy milk, and smart dogs, so they shouldnt be too upset. they are just going to have to get used to poptarts without icing!

anyway, i have a lot more to say..but i dont feel like saying it.

HAPPY BIRTHDAY TO AMBER. i love you, and i hope you are having a wonderful first day of your 21st year!
